- 1 lb lean ground beef
- 1 tbsp vegetable oil
- 1 onion, chopped
- 1 clove garlic, minced
- 2 carrots, julienned
- half sweet red pepper, thinly sliced
- 2 tbsp water
- 1 tbsp paprika
- 1 tsp ginger, ground
- 1 tsp cumin, ground
- 1 tsp cinnamon, ground
- ½ tsp salt
- ½ tsp hot pepper flakes
- 28 oz. diced tomatoes
- 2 tbsp tomato paste
- ¾ cup sliced green olives
- 2 tbsp fresh coriander or green onion, chopped
- 2 cups hot cooked couscous
This certainly beats any box variety of Hamburger helper. The family liked it and it was easy to prepare. There is around 5-10 minutes of chopping however.

1. In large skillet, sauté beef over medium-high heat, breaking up with spoon, until no longer pink, about 5 minutes. Using slotted spoon, transfer to plate. Drain fat from skillet. |
2. Add oil to pan; fry onion and garlic over medium heat until fragrant, about 1 minute. Add carrots, red pepper, water, paprika, ginger, cumin, cinnamon, salt and hot pepper flakes; fry, stirring often, until tender-crisp, about 3 minutes. |
3. Return beef and any juices to skillet. Add tomatoes and tomato paste; bring to boil. Reduce heat and simmer until vegetables are tender, about 10 minutes. Stir in olives and coriander (or green onion); heat through, about 1 minute. Server over couscous. |
